More Info: The grape skins are macerated to start with and then added to the fermentation, which is what gives the wine its vibrant orange colour. The wine is then aged on its lees for 3 months, adding texture and complexity to the wine.
The Santa Tresa Estate in south-east Sicily is not only certified organic but also takes a completely holistic approach to growing grapes and making their wines. The vineyard includes a colony of bees that helps with pollination and produces organic honey. The estate has been growing olive, lemon, orange and almond trees for centuries, adding to the natural aromatics of the region. They encourage weeds to grow in between the vines that attract the right kind of insects and maintain a unique micro-organism below ground. The same style of approach is used in the winery where they have a minimal intervention style of winemaking, allowing the wines to speak for themselves.
